Recipe for Writing Success: Combine Sweet Memories and Tasty Treats

Early readers of my upcoming novel, I KNOW SHE WAS THERE, loved a character named Muzzy (inspired by the nickname of my own dear nana). Muzzy, mother extraordinaire and whiz in the kitchen (just like Nana), makes cheesecake bites in one chapter. Here's her quick, easy recipe, perfect when you need a dessert but have only minutes to prepare it:


Muzzy's Nilla Wafer Cheesecake Bites:


Sixteen ounces of cream cheese (softened)

3/4C granulated sugar

2 eggs

1 teaspoon vanilla extract

24 vanilla wafers


Preheat oven to 375 degrees

Beat cream cheese and sugar

Add eggs (one at a time) and vanilla.

Grease the bottom of a muffin or brownie pan and place two vanilla wafers in each depression; top with cream cheese mixture.


Bake for 15-18 minutes, until toothpick inserted in the middle comes out clean. Cool in fridge for 30 minutes. Add favorite toppings. I loaded mine with raspberries and blueberries because all that fruit makes this a healthy dessert, right?
